Cashew Nut Butter

INGREDIENTS

  • Roasted & salted cashew nuts
  • Use roasted and salted cashew nuts for best flavour.
  • Coconut Oil. Melted coconut oil works best but you can use any oil (hemp, olive, avacado etc.). The oil speeds the process along, but is not essential.

METHOD

  1. Sprinkle raw cashews with sea salt, toss and roast at 160°c for 15-20mins.
  2. Add cashews to a food processor and blend. It starts off crumbly, but later clumps together and stick to the sides.
  3. Stop the process to scrape down the sides, then continue.
  4. While the machine is running, pour in  melted oil.
  5. Continue processing until you reach a smooth, creamy, butter consistency
  6. Serving suggestions: Pair with your favourite snack, it compliments apple slices perfectly or can be spooned on top of a warm bowl of oats.
