This simple chocolate chia seed pudding is naturally sweetened, boasting a delicious thick and cream texture – my toddler absolutely loves it! It is packed with nutrients and can be enjoyed for a healthy breakfast, snack, or indulgent dessert.
- In a small bowl, mix (sifted) cocoa powder, maple/agave syrup, ground cinnamon, salt, and vanilla. Whisk ingredients, then add a dash of plant based milk while whisking until you form a paste.
- Add remainder of your plant based milk and whisk until super smooth.
- Add chia seeds. Whisk again to combine.
- Cover mixture and refrigerate overnight, or for a minimum of 3 hours (the more pudding-like the consistency, the better the taste). It is advised give the mixture one final whisk (or stir) once it has been in the frigde for approx 45 mins..
- The pudding is best served fresh, but can keep (covered) in the fridge for up to 5 days. Always serve chilled, and the fun bit!…add your desired toppings like fruit (mango puree or frozen bananas work a treat), nuts, granola, or even plant based whipped cream.
