Choc Chia Puddings

INGREDIENTS

  • 1/4 cup cocoa powder
  • 4 Tbsp maple/agave syrup
  • 1/2 tsp ground cinnamon (optional)
  • Pinch of sea salt
  • 1/2 tsp vanilla extract
  • 1 1/2 cups almond milk (use light coconut milk for a more creamy taste)
  • 1/2 cup chia seeds

This simple chocolate chia seed pudding is naturally sweetened, boasting a delicious thick and cream texture – my toddler absolutely loves it! It is packed with nutrients and can be enjoyed for a healthy breakfast, snack, or indulgent dessert.

 

  1. In a small bowl, mix (sifted) cocoa powder, maple/agave syrup, ground cinnamon, salt, and vanilla. Whisk ingredients, then add a dash of plant based milk while whisking until you form a paste.
  2. Add remainder of your plant based milk and whisk until super smooth.
  3. Add chia seeds. Whisk again to combine.
  4. Cover mixture and refrigerate overnight, or for a minimum of 3 hours (the more pudding-like the consistency, the better the taste). It is advised give the mixture one final whisk (or stir) once it has been in the frigde for approx 45 mins..
  5. The pudding is best served fresh, but can keep (covered) in the fridge for up to 5 days. Always serve chilled, and the fun bit!…add your desired toppings like fruit (mango puree or frozen bananas work a treat), nuts, granola, or even plant based whipped cream.
