Creamy Cashew Vegan Cheese Sauce

  • 2 cups cashew nuts
  • 2 cloves garlic
  • 1 x tsp sea / Himalayan salt
  • Alkaline water

Does NOT require overnight soaking, the texture will get soft and chunky. The sauce should stay creamy and smooth.

This 10 minute recipe makes a perfect dip or versatile base sauce for many Italian-style pasta dishes. The comforting, creamy sauce is delicious and adds some nutritional value to family favourites (why not try a homemade vegan mac & cheese for a healthy twist on a comfort food classic).


  1. Place cashews in a bowl. Cover with water and soak for about 2 hours. Drain and rinse thoroughly.
  2. Place soaked cashews in a food processor or blender.
  3. Add water, garlic, and salt.
  4. Puree until the mixture is extremely smooth.
  5. If consistency is too thick, water can be added until desired consistency is reached.
  6. Can be stored in fridge for up to 4 days, or freeze (the fresher when frozen the better).
